Pouilly fumé
Description
At Domaine Les Ormousseaux, we have 13,89 hectares of Pouilly Fumé in the hamlet of La Roche (which means “The Rock”) situated in Tracy-sur-Loire, in the Bourgogne Franche-Comté region, right next to the Loire River with an exquisite view of the Sancerre hill.
We have two parcels, Les Froids and Le champ de l'abreu, planted in the old Flint quarry, where they removed around 1000 tons of Silex. Here, ancient flint clay soils from the cretaceous period dominate, offering little vigour but small compact bunches and tiny berries that reflect the terroir. These soils help to regulate vines and produce qualitative wines with minerality and tension. In their youth, the wines often require aeration to open. The typical characteristics of wines grown on these soil types are reminiscent of spices and flint, often requiring at least two years of patience before the wine will showcase its true potential.
Our vineyards are farmed organically, nourishing the vines and enriching the soils.
Winemaking
We gently press the whole bunches, separating the heart of the juice from the end of the press to retain its natural acidity. After cold settling overnight, the hazy juice is transferred into various fermentation vessels the following morning. These vessels, including stainless steel tanks, 600-liter French Oak barrels, and 220-liter Wineglobes, are our partners in crafting wines of depth, complexity, and purity. They help us capture the soul of the wine and express our unique terroir. We age our wines on fine lees for one year, a natural expression of time, before preparing for bottling.
Tasting
The delicate aromas of grapefruit, white blossom, and flint on the nose reflect its terroir and typicity. The palate confirms its origin with typical minerality, tension, and a hint of pepper. The finish is long and crisp, with a touch of fumé one expects from a Pouilly Fumé.
